Workshop: 3Dfoodprinting, what is already daily practice and what will be the future?

FabLab Maastricht is doing research into 3D printing of food since 2013. At the makerfaire Rome that year we were happy to print Nutella on a cookie. The foldable multimaterial 3D printer which was developed in our Fablab is now a company at the famous Hightech campus in Eindhoven: byFlow. 15 employees build and sell 3D printers in batches of 100 printers. They collaborate with the biggest foodindustry, universities, Michelin chefs, top chocolatiers, patissiers, catering companies, food designers etc. Together they optimised the work􀂢ow: own 3D design software Studio, 3D foodie the Thingiverse for food (3D designs and recipes for food), pre􀂡lled cartridges, easy to use 3D food printer etc. FabLab Maastricht is still doing the long term research, focussing on 3D food as medicine. Meals for people who can not swallow, personal nutrition for special target groups like sporters (combined with DNA analyses and smartwatches), use of meat replacers like algae, insects, seaweed etc, 3D printed food in airplanes etc
